How to prepare a delicious Chilaquiles recipe for a Mexican brunch?

If you're looking for an easy and delicious Mexican recipe for your next brunch, look no further than Chilaquiles! This traditional Mexican dish is perfect for brunch with friends or family.

In this article, we'll show you how to make delicious and spicy Chilaquiles with our Las Chachitas sauces. So, get out your pots and pans and follow our step-by-step guide to making this dish that will please all Mexican food lovers!

Ingredients (Serves 4):

  • 400g of real totopos or the equivalent in plain triangle chips
  • A pot of chachi roja or chachi verde
  • A pot of crème fraîche
  • Comté / Emmental / Gouda / or other cheese – approximately 200 g
  • Coriander, avocado and red onion for garnish.
  • Optional: Shredded chicken or fried egg.
  • To accompany, a red bean puree (see our recipe here )

The Mexican Chilaquiles Recipe

  1. Place about 100g of totopos or triangle chips on each plate.
  2. Open a can of salsa roja or salsa verde and pour its contents into a saucepan with a little olive oil. Add water to dilute the hot sauce (half the amount of sauce, or more if needed). Add a quarter of a chicken bouillon cube. You can also dilute the sauce with chicken broth (cooking water) that you have previously prepared, adding salt if necessary (according to your taste).
  3. Cover your totopos with cheese.
  4. Cover the totopos and cheese with the hot sauce to melt the cheese.
  5. Add the crème fraîche (a good amount), then the coriander, a few slices of avocado and the red onion to garnish.

    You can also add shredded chicken or a fried egg.
  6. On the side, add the bean puree (recipe here ).

You can add more “ Las Chachitas ” sauces... or not 😊.
